Crispy Bits Fried Potatoes

The kids are struggling a bit with my efforts to get us back on real food. I was expecting it so I made some plans for a few of their favorites. They call these my crispy bits potatoes. I start with a little bit of olive oil and an even smaller amount of bacon fat. I slice the white potatoes into bite sized pieces and sauté until they are golden brown-making sure to scrape off all of the crispy bits. We love the corn syrup free ketchup from Local Folks Foods.
